These sound fantastic - one question - is the 10T butter = 10 tablespoons? I'm in Australia and our butter isn't sold in sticks. Our butter gets sold in either 250g or 500g then we measure it out. I'm really looking forward to cooking these (and maybe leaving a few for the kids when they get home from school).

I do something extremely similar to this. Basically I play around with the dressing depending on what I have on hand. Last week I had leftover dressing from my spinach salad (http://www.mindfultable.ca/2010/07/the-ultimate-picnic-spinach-salad/) and used that on the potatoes. Very Yum. Another favourite is to make a pesto-type dressing, which would be essentially substituting the oregano in your recipe for about a 1/2 cup fresh, chopped basil, upping the oil a bit and also adding about 1/4 to 1/2 c parmesan cheese. (Omit cheese for a vegan salad). Also very yum.

I think it would work; I'd go light on the dressing because balsamic is strongly flavored, and maybe cut the amount of vinegar down so it's only a couple of tablespoons. Let me know!

hint - if you brew it in a french press you can pretty much skip the cheesecloth. the very bottom gets a wee bit of grounds, but not much, and it's easy to stop pouring right before you're going to get them.

the thing that always gets me is remembering to do the brewing early enough that it will be steeped when i want it. i'm being sneaky now and getting it going at the beginning of the day instead of the end!
